The production process of sencha involves a steaming process, and sencha that has been steamed for two to three times longer than normal sencha is called "Deep steamed Sencha".
Steeping for a longer time reduces astringency and gives the tea a rich, mellow taste. Because the tea leaves are fine and produce a vivid water colour and taste, it is also recommended for cold brewing.
